You ever have one of those weeks where you could just lick the brownie batter right out of the bowl?  As good as brownies are sometimes all you can manage is to bring together the batter and then it’s kind of a crap shoot from there.  This was practically a delicacy back in my high school days {which were officially 10 years ago…yikes} and I have more than one picture of my friends and I mixing up brownie batter just to lick it off spatulas and graham crackers and chocolate chip cookies and our fingers.  I shudder to think how many times I might have been close to salmonella poisoning in my life.

So since my repeated requests for brownie cake have gone unanswered…ahem…I had to take matters into my own hands.  Plus it’s just been a brownie batter kind of week.  I’ve been so busy creating and fine tuning a planner {that I’m crazy excited to launch in just a few short weeks!!} and putting together another cookbook freebie for my lovely subscribers just in time for the holiday season and all that on top of prepping to go out of town for 3 weeks in the beginning of November.  Whew.

Suffice it to say I didn’t have the energy to wait around for brownies to cook and then wait around for brownies to cool.  Ain’t nobody got time for that.  Ok, just kidding.  Usually I have time for that but this time I was all about instant gratification.  Because when you’re too busy to remember to eat lunch most days do you really think you’d remember to snag brownies out of the oven?  Not like I’m talking from experience or anything.  This dip comes together on the stove top in less than 10 minutes.  And half those minutes are spent grabbing the 5 ingredients you need from the pantry.

I served this with pretzels and graham crackers.  I say serve like I got fancy about it when really I ate this standing up in the kitchen as part of my lunch.  BUT if you’re classier than me you could actually legit serve this with pretzels, graham crackers, animal crackers, or even apple slices.  And if you stick it in the fridge for a quick five minutes first it’ll thicken up to an almost pudding like consistency.  Perfect.

Brownie Batter Dip

Yield: 8 servings
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

Ingredients

  • 1 1/2 sticks butter
  • 1/2 cup cocoa powder
  • 1 1/2 cups sugar
  • 8 oz cream cheese, softened and cut into 1 inch cubes
  • 1/2 cup semi-sweet or dark chocolate chips

Instructions

  1. Melt butter in a medium sauce pan over low heat.
  2. Once melted add cocoa powder and whisk well to combine, until no lumps remain.
  3. Add sugar and cream cheese and whisk until completely dissolved and incorporated.
  4. Turn off the heat and add chocolate chips, whisking constantly until melted.

I can't make this recipe. I'd probably eat it before it was time to serve, and if I didn't, my mini would. Because chocolate. ;) Maybe I'll be brave one day and make it for a party, like after the party has started and people are already in the house haha

This looks fantastic! I don't think I would be able to control myself and the entire bowl would be gone before it hit the serving table. #noshame

PS-LOVE LOVE LOVE the chevron bowls! Did you get those at Target?? I've been looking for some blue-ish ones for quite some time.

Yes! I might have eaten half of this before I was even finished taking pictures :P And I did get them at Target on Easter clearance earlier this year :) I have them in orange and blue!
