I’ve got another thing to cross off the list. Pistachios. If you’re new here I’ve got this running list of foods I thought I hated simply because my mom doesn’t like them so we never had an occasion to try them when I was a kid. I feel like at this point I’m just a walking PSA for letting your kids try ALL the foods, not just the ones that are your favorites. Seriously, though let ’em try the food! Without your prejudice. So far I’ve crossed off pecan piezucchini {in brownies anyway}, and beans. Seriously, so many things you can do with beans. I’ve been missing out for awhile.

Pistachios are a weird color. I get that. But c’mon celery is green. Peppers are green. Lettuce is green. And y’all don’t have a problem with that! Or maybe you do, I dunno. I certainly wasn’t a fan of pistachios for the longest time. Then again I’m not such a huge green food fan in the first place. But I’ll make an exception for pistachios. They’re even worth the pain of digging them out of those little shells.

Plus pistachios are good for the immune system. Which is kind of a relief since I’m currently in Maryland and far far away from the roomie’s huge stash of essential oils. I’ve really come to rely on those oils. Dangit. And dark chocolate is good for your heart. And cranberries promote weight loss. And almonds help reduce bad cholesterol. This granola is like a doctor’s visit in a bowl. Except I’m not a doctor so you should probably go see your medical pro on the reg and just enjoy this granola in between visits.

Granola is so easy to customize with whatever nuts, dried fruit, and sweet bits you like. Personally I like to mix all my extra stuff in at the end vs while it’s baking because the dried fruit can become chewy and the chocolate chips melt but you do you.

Dark Chocolate Pistachio Granola

Yield: 4 cups
Prep Time: 5 minutes
Cook Time: 12 minutes
Total Time: 17 minutes

Ingredients

  • 3 1/2 cups quick oats
  • 4 Tbs butter
  • 1/3 cup honey
  • 1/4 cup brown sugar
  • 1/2 cup dried cranberries or cherries
  • 1/4 cup shelled pistachios
  • 1/4 cup almonds, roughly chopped
  • 1/2 cup dark chocolate chips

Instructions

  1. In a medium sauce pan melt butter and honey then add in brown sugar and mix until completely combined.
  2. Stir in oats and mix until evenly coated then spread in an even layer on a lined baking sheet.
  3. Bake at 350 degrees for 12 minutes, stirring halfway through.
  4. Allow to cool and stir in your dried cranberries, pistachios, almonds, and chocolate chips.

My parents were picky too, so I had a VERY limited palate -- pistachios were one that I actually liked though! I love the whole combo for this granola! Sounds perfect!!

I love your stories, they make me smile... I too have a whole list of foods that I thought I disliked from my childhood but actually love them now I have given them a chance, pumpkin is the latest and I am now working on sweet potato :D

Pistachios have always been a favourite of mine though and they sound fabulous in this dish!
