There comes a point in winter, sometime between new year’s resolutions and spring thaw, where you just want to eat a freakin’ potato chip. Or a whole bag. Or so they say. Nothing against all those fruits and veggies but there’s something so damn satisfying about the crunch of a thin, crispy wafer of carbs.

It’s undeniable.

You can decide to wreck your resolutions for the *cough*thirtieth*cough* time OR you can drag yourself from the couch and into the kitchen and make up these healthy {yeah, I said it} cinnamon apple chips. You could alternately make up these homemade potato chips, too. It’s totally up to you.

I’m not going to lie you can’t eat healthy, like, all the time so sometimes you just need the potato. But a baked wafer of possible cancer {seriously, where did I read that??} made at home in your oven can’t be that bad right?

That’s my story and I’m sticking to it. Annnnnyway.

I’d tried making these a few years ago but I didn’t have a mandolin slicer and each slice was a completely different size from the one before it.  This is a no go for potato chips. Lays don’t come in different thicknesses, ya know? Do yourself a favor and either go to culinary school to learn how to slice things perfectly. Arguably the more expensive option. Or buy a mandolin slicer.

 

I definitely recommend the mandolin slicer just for time and money’s sake but the choice is totally yours of course.

Perfectly thin. Completely uniform. Amazingly crispy. I’m so in love. With the mandolin slicer and these apple chips. Because now I need an apple tree in the backyard so I can make these over and over and over again!

The beauty of these babies is they are naturally sweet.  I mean you’re sprinkling an entire humongous apple with just a little cinnamon.  You need nothing else and they will totally satisfy your sweet tooth.  Plus, I’m pretty sure I’ve never read that apple chips will give you cancer. Amazing, right?

Healthy Cinnamon Apple Chips

Yield: 2 servings
Prep Time: 5 minutes
Cook Time: 2 hours
Total Time: 2 hours 5 minutes

Ingredients

  • 1 large or 2 medium apples, thinly sliced
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 200 degrees and line baking sheets with parchment paper.*
  2. Lay apple slices in a single layer on lined baking sheets and sprinkle evenly with cinnamon.
  3. Bake at 200 degrees for 2 hours.
  4. Once you remove the slices from the oven loosen them from the parchment paper and they will crisp up even more

Followed the instructions and mine are massively burnt and look nothing like they should. Why?

Oh no! This can happen if your oven runs hot or if you use a super sweet apple with a high sugar content because sugar burns very quickly.

I usually store these in Ziploc bags and they've never lasted longer than 2-3 days (because we eat them, not because they go bad). I'd say you probably could store them for up to a week!

How long will these keep for???

The longest I've ever kept them is 7 days. I made a huge batch and portioned them out into baggies for snacks for the week. I wouldn't suggest keeping them longer than that unless you have a vacuum sealer or something similar.
