I borrowed this No Bake Cookie recipe from Nicole at Little Blog on the Homestead but wanted to make it a little healthier and, since she is the Queen of this cookie, get her opinion on the changes.  Our secret ingredient for this month’s Monthly Ingredient Challenge was coconut.  But I am not a coconut eater.  Pretty much the only place I can handle coconut is in my rum.  Which I’ll be doing next week for my 7 Summer Cocktails line up.  But since last month we had so many desserts when we had our lemon challenge I wanted to try something at least a smidge healthier.

So I took Nicole’s recipe and I replaced the butter with coconut oil and then used honey instead of sugar.  And let me tell you.  I had to slap plenty of hands and use every ounce of my own will power not to scarf these babies down before I was able to get a few pictures.  They are so good!  I was worried you’d be able to taste a strong coconut flavor from the oil which is why I used honey instead but you could probably use straight sugar and enjoy these just as much.

We bought honey from a local farm after I’d first moved here and was battling the brand new blooming things and my allergies were killer.  Local honey is a great way help with allergies because you’re building up a tolerance by eating a by-product of local flowers.  It really works.  For really real!  Although my allergies came and went without the help of some local honey I was still pumped to use it here.

The difference between the two recipes?  Mine has fewer calories and Nicole’s are crunchier.  The honey keeps these soft and chewy which I really like.  And honestly, if you pressed these into a pan you they would be really similar to these granola bars I made for my friend Sydney at Tastefully Frugal.

Nicole also scoops hers out onto some foil and then squishes them to a flatter cookie like shape where as I kept mine round.  I like the shape and if I made these again I’d probably use my smallest cookie scoop (aff) to form these versus the largest one and make a bunch of bites.  Bite sized, these babies would be perfect to toss in the kids’ lunches for a sweet treat that won’t rot their teeth out.

Healthy No Bake Peanut Butter Cup Cookies

Yield: 24
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes

Ingredients

  • 1 ½ cup honey
  • ½ cup milk
  • ½ cup cocoa
  • ½ cup coconut oil
  • ½ cup peanut butter
  • 1 tsp vanilla
  • 4 cups quick oats

Instructions

  1. Add honey, milk, cocoa, and coconut oil to a small sauce pan and bring to boil, boiling for 1 minute.
  2. Turn off heat and stir in peanut butter and vanilla until smooth.
  3. Fold in oats until well coated and spoon onto foil or silicone baking mat. Let cool completely and store in the refrigerator.
