Last week I gave you a sneaky peek of these delicious poptarts on Instagram.  While we are cutting processed foods out of our lives I have to admit that I really miss poptarts.  Poptarts, however bad for me they are, are the world’s permission for me to eat pie for breakfast.  And who doesn’t want that kind of permission?!  I wanted needed a homemade version to satisfy my craving.

Enter these delicious poptarts.  Buttery, flaky crust + Nutella = a happy tummy.  Especially on those mornings where I really just need to grab something and run.  And because…Nutella.  To the inventor of Nutella you are practically a god.  Bless you.  So when you combine a homemade poptart with Nutella what do you get?  Fireworks and rainbows and unicorns!  Seriously, this is the best idea I’ve had in awhile.  You’re welcome.

And even though I was just telling you when I made my apple pie scones what a horrible disaster I am at pie crust and how I’m way too lazy to roll things out this recipe is basically a rolled out pie crust.  Can you believe it?  I feel like I might have just lied to you.  But I didn’t.  Lets say instead that this is just how much I love poptarts.  I rolled out pie crust for them.

These poptarts are surprisingly easy but also have lots of steps.  And I get a different number of poptarts every time I make them!  This time it was 9.  Sometimes it’s 7.  Sometimes it’s 8.  This is probably a direct result of me getting annoyed with rolling the dough out and not rolling them flat enough.  Even though I bought some awesomesauce rolling pin guides my rolling pin is on the small side so I’ll need to invest in a longer one before making full use of those guides.  But I already know they’re going to make all my rolling pin dreams come true!

Boom!  Go off, my darlings and enjoy the last day of your long weekend.  You’ll have plenty of time to make and enjoy these delicious homemade poptarts!  Or you know, if you’re too lazy to roll out dough like I usually am, just enjoy some Nutella off a spoon!

Homemade Nutella Poptarts

Yield: 9 poptarts
Prep Time: 20 minutes
Cook Time: 18 minutes
Total Time: 38 minutes

Ingredients

  • 2 cups flour
  • 2 Tbs sugar
  • ½ tsp salt
  • 1 cup unsalted butter, cubed
  • 1 large egg
  • 2 Tbs milk
  • 1 additional large egg, whisked to help with assembly
  • Nutella {or other filling of your choice}

Instructions

  1. Whisk together the flour, sugar, and salt and cut in butter with a pastry cutter until it looks like coarse crumbs.
  2. Whisk together egg and milk in a separate bowl. Make a well in the center of your dry mixture and add the wet ingredients. Mix until completely combined.
  3. Split the dough into two equal parts and turn the dough out onto a lightly floured surface. Roll into a 9 by 12 rectangle.
  4. Break out your ruler and make 9 3 inch by 4 inch rectangles.
  5. Carefully transfer to a baking sheet lined with foil and greased with cooking spray. Brush the dough with your beaten egg. This will help the dough stick to itself.
  6. Add a tablespoon of Nutella to the center of the dough and spread it out slightly with your spoon. Leaving enough room to seal the edges.
  7. Roll out, measure, and cut the other half of your dough and lay it on top. Crimp the edges with a fork and poke holes in the top to let the steam escape.
  8. Bake at 350 degrees for 15-18 minutes or until golden brown.
