We’re entrenched around these parts.  The battlefield?  The kitchen.  The enemy?  Dirty dishes.  We had a little sink malfunction the other week that we’re currently in the midst of repairing which means one half of our double sink is out of commission.  No big deal right?  Wrong!  Even though our dishwasher gets more action than Hallmark on Valentine’s Day our sink is always overflowing filled with dirty dishes.  And you’d never be able to guess what everyone in this family hates doing.  Oh, hey…you guessed it!  Dishes.

Some days I have a hankering to make a meal that uses 4 bowls, 3 plates, 2 spoons, 1 knife, and a partridge in a pear tree.  But on those days when the sink is so full I have a serious internal debate with myself about the pros and cons of switching to paper plates and plastic forks I do not under any circumstances want to make even one quarter of an extra dish dirty if I don’t have to.

Enter this fabulously creamy one pot chicken alfredo.  Everything cooks in just one pot, including the pasta!  And all the liquid is absorbed until you’re left with this fantastically creamy sauce, perfectly tender pasta, and moist chunks of chicken.  Think of it has a homemade hamburger helper.  Except without all the sodium and other ingredients you can’t pronounce.

I’ll admit that I love this dish a little more than my one pot sausage pasta but you can take just about ANY combination of pasta, meat, and sauces and turn it a one pot meal by adding a little chicken broth.  Don’t have chicken broth?  I’ve totally cheated before and used salty water.  Whatever.  You cook the pasta in water don’t you?!  Regardless your family will love you and request this over and over.  I know because mine does!

One Pot Creamy Chicken Alfredo

Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

This creamy, cheesy delicious chicken alfredo will be your new go to pasta recipe for busy weeknights!

Ingredients

  • 1 pound chicken breasts, cut into 1 inch pieces
  • 1 Tbs olive oil
  • 1 clove garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1/2 pound spaghetti, uncooked
  • 1/2 cup parmesan cheese

Instructions

  1. Heat olive oil in a large skillet and brown chicken. Add garlic and sautee for one minute.
  2. Add chicken broth, heavy cream, and pasta and bring to a boil.
  3. Reduce to a simmer and let cook until pasta is tender.
  4. Let stand uncovered for about 5 minutes and sauce will thicken as it stands.
  5. Stir in parmesan cheese and enjoy!

How easy is this!? I'm not a fan of doing dishes either (luckily I'm caught up now for once), but I love a good, simple, mess-free dinner, and this looks super tasty! Can't go wrong with chicken & noodles!! :)

We had a dishwasher melt-down a few months ago at my house...so I know that dirty dish pain! I love these one-pot dishes -- so perfect for busy weeknights when you don't have much time to cook after work! Looks delicious Meaghan!

I made this all. the. time. when I was working outside the home because it came together so fast. Bonus if I somehow had leftover chicken because then I just needed to boil up the pasta and creamy delicious sauce :) Here's hoping your dishwasher is back in working order!

Pahhaaaa, with you on the doing dishes thing... We have an 'arrangement' that whoever does the cooking does not do the dishes and if we fight about anything it is who is going to cook. Primarily because I am the sort of cook that uses EVERYTHING in the kitchen to make dinner :D

Oh my GOODNESS. So does my sister and it drives me batty because I'm that person who will use one spoon/fork/knife whatever the entire time I'm cooking and just wash it between each individual job that utensil needs to do. I don't know why this seems like less work than just washing 3 forks one time vs. 1 fork 3 times, but it works for me ;)

I made a one pot meal last night with noodles. It's ridiculous how easy they can be. And yay for hardly any cleaning up! I also made alfredo the other night, but it was not very good. Oopsy.

Do you know what I love about this dish? It's all natural, and I can easily make it vegetarian by switching out the chicken and adding a bright and colourful veggie like broccoli. Oh, and I feel you with the dish thing. I love cooking, but I hate the cleaning part. ;)

My roommate tries to sneak in some peas whenever I make this so y'all would probably get along great ;) I love that this dish has no cream of junk in it, too! Plus I'm a happy camper with fewer dishes to clean.
