Summer FINALLY showed up today. And I couldn’t be happier!  It is, after all, my second favorite season.  I love Virginia’s hot, humid summers because it’s the best excuse for my favorite treat.  Ice cream.  And I finally got a little taste of that today here in Michigan. Hands down the absolute best part of summer for me is creamy, rich, frozen ice cream.  I’m partial to mint chocolate chip but then there’s soft serve.  Ohhhh soft serve.  Sigh.  How it has my heart.  Sorry mint.  Many wonderful years ago the most ah-may-zing soft serve ice cream stand opened not far from my mom’s house.  It’s so legit that it closes during the cold season.  Yet another reason to dislike winter 😉

As they’ve grown in popularity they’ve added items to their menu and even on chilly rainy days the line wraps around the parking lot.  It wasn’t that I was happy with the cotton candy or black cherry soft serve but these new items are just…ohmigoodness.  Sorbets, sno-cones, funnel cakes, fried twinkies.  It’s fair food at it’s finest and the list goes on and on.  But the sorbets are my favorite.  Fruity but sweet and wouldn’t you believe it…crazy easy to make at home.  Lucky for me.  And for you!  Because now I can enjoy my favorite orange pineapple sorbet even when the shop is closed.  And it’s probably healthier for me, too.

I love this recipe because it doesn’t require any ice.  So that means it won’t get diluted as it melts and change the flavor of your yummy treat.  And you can totally fresh squeeze your own orange juice and make this twice as healthy.  AND {man this just keeps getting better and better} this is an awesome way to get your kids eating fruit and calling it ice cream.  How’s that for a summer parenting win?

Not an orange and pineapple fan?  Mix and match almost any frozen fruit and your favorite fruit juice for a delicious sorbet treat your family will love!  When my mom tasted this she said it reminded her of the Dole fruit whips you can get at Disney World and she was right!  So whether you’re looking for a sweet and healthy treat to hold you over until summer or missing a little Disney World action you will just fall in love with these!

Orange Pineapple Sorbet

Yield: 4 cups
Prep Time: 5 minutes
Total Time: 5 minutes

Ingredients

  • 1 whole pineapple, cut into cubes and frozen
  • 1 cup of orange juice
  • 1 Tbs honey

Instructions

  1. Add frozen pineapple, orange juice, and honey to a blender and blend until smooth.

I love that there is no water. I hate when sorbets melt and taste all watered down! Plus I love how well orange and pineapple go together. I bet it would make for a great sangria base with white wine too....

I think you had me at pineapple. It is, by far, my most favourite of all other fruits. This is right up my alley! I love the simplicity of this one, Meaghan, and the addition of the honey. I'm not a fan of ice cream - it makes me bloat :( - but I could certainly get on board with this one!

Thanks, Paige! These are definitely something I love to eat when I'm feeling like a sweet treat but don't want to go all out with ice cream. The citrus in this just makes it so refreshing!
