Last year when I was knee deep in my couponing obsession I came across a coupon for brownie bark and at less than $1 a bag I thought…why not? And oh my heaven’s brownie bark is absolutely the best thing since, well, brownies. It’s crunchy with an intense chocolaty, brownie taste. Perfection. And it’s super simple, too which is always a plus in my book.

I’ve made brownie bark from a boxed cake mix before but it honestly doesn’t compare to making it completely from scratch. Like not even close. So when Bob’s Red Mill offered to send me a bag of their amazeballs unbleached organic flour I fan girled a little bit and then jumped at the chance. I love their product because it’s the same high protein flour used by pro bakers and produces everything from perfectly textured loaves of bread to light, airy baked goods. And it’s kinda the star of this bark.

Does anyone else love white elephant parties as much as I do? I had no idea what these even were until some friends and I did one several years ago. I had NO idea what to bring so I just made cookies, boxed and wrapped them up, and set them in the pile. I like to feed my coworkers. What can I say? Never in my wildest dreams did I imagine people would be fighting over my cookies. So thus the tradition for a baked good as my white elephant gift began. I haven’t attended one of those parties since I moved but a friend recently confessed that she missed the opportunity to haggle and steal and barter for my cookies. I promised her a care package 😉 And this stuff will definitely be making the cut.

I holiday’d it up {that’s a word now, you’re welcome} with some peppermint and crushed candy canes and some white chocolate because white chocolate just makes me think Christmas. I’m not sure why. The result is a crispy sweet brownie bark perfect for your next cookie exchange or white elephant party or Tuesday night watching movies in your pjs. Whatever.

Peppermint Brownie Bark

Yield: 15 pieces
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Ingredients

  • 1/2 cup Bob's Red Mill Organic Unbleached Flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1 egg
  • 1 egg white
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 cup dark chocolate chips
  • 1/4 cup butter
  • 1/4 cup white chocolate chips
  • 10 peppermint candies, crushed

Instructions

  1. In a small sauce pan melt butter then add chocolate and stir until smooth. Remove from heat and let cool five minutes before whisking in the sugar, egg, egg white, and vanilla.
  2. Stir in the flour, salt, and baking soda until combined.
  3. Spread on a lined baking sheet in a thin layer and sprinkle with white chocolate chips.
  4. Bake at 350 for 15 minutes then remove from oven and slice with a pizza cutter*
  5. Top with crushed peppermint candies and return to oven for an additional 5 minutes.
  6. Allow to cool completely on the baking sheet then break apart and store in an airtight container.

Notes

*If you are using a silicone baking mat to line your baking sheet be VERY careful when using the pizza cutter to make your slices because you do not want to cut your baking mat.

I love white elephant exchanges! I've never really gotten anything bad, at my old job we always did a wild ornament one which was cool, that's how I ended up with an armadillo ornament on my tree
