This year for Valentine’s Day I’m the only single one in the house.  But even us single kids like to enjoy a little Valentine’s Day treat.  Or fill the void with food.  Whichever.  Red velvet everything seems like a natural food for Valentine’s Day.  I mean, do I even really have to explain why?  But since I already rocked the conversation heart cookies last year and the adorable heart shaped whoopie pies this year.  I thought I’d get a little fancy {and give the heart shaped things a rest for a bit}. What doesn’t sound fancy about the word ‘trifle’?

Red velvet is a uniquely southern dessert even though it was technically created by the Waldorf in New York in the way back days. We won’t talk about that though and we’ll just go on with this beautiful cake. You used to get that striking red color from the reaction between the baking soda and the vinegar but now we have to add a little red food coloring. I prefer gel food coloring over liquid because you don’t need to add as much to get the right color.

I used this amazing recipe from Goodie Godmother and it really took me back. I made cupcakes instead of a layer cake and when I ran out of icing decided to whip up these red velvet trifles instead. Fancy schmancy, right? Serve these up in a stemmed or stemless wine glass whether you’re enjoying V-day alone with your honey, with friends, or rocking it stag. On your couch. Watching movies and drinking wine. Whatevs.

Red Velvet Trifle

Yield: 4 trifles
Prep Time: 30 minutes
Cook Time: 24 minutes
Total Time: 54 minutes

Ingredients

  • 4 red velvet cupcakes, unfrosted
  • 1/2 cup cream cheese frosting
  • 1 cup whipped cream plus more for serving

Instructions

  1. Bake your favorite red velvet cake and allow to cool completely.
  2. Combine cream cheese frosting with whipped cream and mix well.
  3. Cut each cupcake into ½ cubes and add 1/2 the cupcake to the bottom of your glass.
  4. Spoon 3 heaping Tbs of frosting mixture on top of the cake.
  5. Add another layer of cake pieces and then a 2nd layer of frosting mixture.
  6. Top with more whipped cream and cake crumbs for garnish.
