I can’t believe that summer is almost over and we’re staring down the barrel of fall and school starting and Labor Day.  Not that I’m not crazy excited about fall and all the apple things I’ll be making like pie bites and chips and scones.  Yum.  I’m even going to be hopping outside the box and experimenting with pumpkin.  I never experiment with pumpkin!  That’s just how excited I am for fall.

My family is coming to visit me in Michigan over Labor Day and I’m so excited!  They’re bringing some stuff and hanging out for a couple days so we can wander around gorgeous downtown Holland and maybe even visit some fun attractions like Lake Michigan and Windmill island.  Even though the fall season doesn’t officially start until September 21st Labor Day just feels like our farewell weekend to summer before the weather finally starts turning cooler, the days get shorter, and the kids head back to school.

So keeping in the spirit of doing as little work as possible on Labor Day weekend I’m bringing you the easiest recipe ever.  Seriously, the hardest part of this recipe is not shoving all these marshmallows into your face while you’re dunking them in the candy melts (aff).  Yum.

The best part is that you can make these for absolutely any holiday, season, party, shower, or whatever you can think of.  Dunk the marshmallows in green candy melts and red sprinkles for Christmas, orange and then yellow melts for Halloween, brown, yellow, and orange for Thanksgiving.  Class these up for a bridal shower or bachelorette party and use white candy melts and white crystal sprinkles.  Serve them at a gender reveal party by filling them with either pink or blue melted candy melts and by dunking half the marshmallow in blue and half in pink.  You could even be extra cute and use an edible food marker (aff) to write a question mark on the outside.  The opportunities are endless!

Now, you could melt white chocolate and add blue {or your desired color} gel food coloring (aff) but I have the worst time melting white chocolate.  It fights me and seizes up on me every single time.  It doesn’t matter how low and slow I heat it or how nicely I whisper sweet nothings it turns into this every single time.  If we have any white chocolate whisperers out there who want to teach me your whispering ways I’d be more than happy to hear from you!  But for now I’m just going to stick to candy melts #noshame

Simple Marshmallow Pops

Yield: 0
Prep Time: 1 hour
Total Time: 1 hour

Ingredients

  • 1 bag marshmallows
  • 1 12 oz bag candy melts in desired colors
  • Sprinkles in desired colors
  • Lollipop sticks or decorative paper straws

Instructions

  1. In a microwave safe glass melt candy melts in 30 second increments until smooth.
  2. Pour about a cup of sprinkles into a separate glass.*
  3. Push lollipop stick or paper straw through the marshmallow all the way without leaving any hanging out of the bottom. The easiest way to do this is to leave the marshmallow flat on the counter or table and push the stick in until you feel the resistance of the hard surface.
  4. Carefully dip the marshmallow into the melted candy twisting to evenly coat the bottom, then dip into the sprinkles to coat.
  5. Let dry 30-60 minutes or until candy hardens.

Notes

*You won't be left with any residue so unused sprinkles can be poured back into the container.
