This super easy 3 ingredient banana bread is the perfect way to use up overripe bananas. Add some cinnamon, chocolate chips, or nuts to make it uniquely yours!
I’m not a big banana fan. There isn’t really any medium where I enjoy eating bananas. But my brother LOVES them. In bread and smoothies and just by themselves. He’s a banana-holic. And he so rarely requests that I bake him something. So when he asked me for banana bread I knew I wasn’t going to let him down. I had picked up some bananas from my favorite grocery store last week that were marked way down after a new shipment came in. 6 bananas for 70 cents! And since you need overripe bananas anyway it was a perfect deal.
I would have preferred to make it from scratch but my brother likes it with cake mix so why mess with a good thing? Especially when he’s so picky. Of course I can’t leave it alone so I added some cinnamon and chocolate chips. Sometimes he’ll request nuts, too. The base of this baby is only 3 ingredients but feel free to beef it up however you like to sweeten the deal.
I like how the yellow cake mix makes it look extra banana-y and I think the flavor is better than a white cake mix. Because butter. Since my brother is generally happy to not share this banana bread with anybody I made it in these fun individual paper loaf pans so that everyone can have their own and they don’t have to share. When I asked him if I could send him some more he said “Yes!!” Really, if an exclamation point from a 17 year old boy isn’t a resounding endorsement I don’t know what is.
I’m so excited to pack these in the care package I’m sending to my family this week and hopefully they’ll text me some pictures of them enjoying the food, too! Although I’m half expecting just a picture of some empty containers 😛

3 Ingredient Banana Bread
Ingredients
- 1 box yellow cake mix
- 4 overripe bananas
- 1 Tbs cinnamon, optional
- 2 eggs
Instructions
- Mash bananas in a medium sized bowl and set aside.
- Mix eggs with mashed bananas until just combined.
- Add banana and egg mixture and cinnamon to the dry cake mix and mix until completely combined.
- Separate into two small, buttered loaf pans and bake at 350 degrees for approximately 35 minutes or until a toothpick inserted in the center comes out clean.
You know, I never thought of using box cake mix for banana bread. Freaking genius!
Me either! But this stuff was gone way faster than my scratch made banana bread that’s for sure!
