Some recipes have a really great story and some recipes I just made because I couldn’t get those flavors out of my head. You ever have days like that? Where if you don’t put flavor a and flavor b together someone might get hurt? That’s how these cookies were born. It’s really a benefit to society,  really. No people were harmed in the experimentation of this cookie. Which I feel are pretty close to a scotchie {any scotchie experts give a holler if you know for sure!} but with all the leftover baking chips we had from the roomie’s Christmas goodie making extravaganza and oatmeal cookies on the brain I had to put the two flavors together and give my tastebuds what they’d been craving!

The result were these oatmeal cookies as big as my palm and perfectly crunchy. If you like a soft and chewy oatmeal cookie you’ll have to find that elsewhere because these are really similar to a crispy gingersnap. Perfect dunked into a glass of milk or hot chocolate or as a late night snack or for breakfast. Oats are a breakfast food, right?

You CAN of course make them a little smaller and share the wealth but who would want to go and do a thing like that? The whole recipe makes an even dozen in the large cookies but you could probably get 2 dozen if you used a smaller cookie scoop. But as I always say go giant cookie or go home!

Oatmeal Butterscotch Cookies

Yield: 1 dozen
Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 22 minutes

Ingredients

  • 1 stick salted butter
  • 1/2 cup brown sugar, packed
  • 1/4 cup sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 3/4 cup flour
  • 1/2 tsp baking soda
  • 1 1/2 cups quick oats
  • 6 oz butterscotch chips

Instructions

  1. In the bowl of a stand mixer cream together butter and sugars. Add in egg and vanilla and mix until well blended, scraping down sides of the bowl.
  2. Add flour and baking soda and blend well. Mix in oats until combined.
  3. Fold in butterscotch chips.
  4. Using a medium cookie scoop drop onto a lined baking sheet and bake at 350 degrees for 12 minutes, turning cookies halfway through to ensure even baking.
  5. Transfer immediately to a wire rack to cool.

even though i left a 5 star review, i cant seem to see the reviews on this page, so i just wanted to post mine here just in case - these cookies were simply amazing!! i followed recipe exactly but also added a a small handful of leftover semi sweet choc chips that i had in the pantry - they were a great addition, but the cookies would've been phenomenal either way. thanks, will be bookmarking this - hubby said they were the best cookies i've ever made, and coming from him that's a compliment cause he's not big on sweets!! thank you!!
