Cinnamon and brown sugar offer a sweet but subtle flavor that make these waffles perfect for breakfast or dessert!
At least once a week we have breakfast for dinner. Generally we go with pancakes because the roommate makes the fluffiest pancakes ever. Seriously, they’re amazing. Sometimes we talk about french toast and when that actually happens we go for these french toast muffins just to avoid the soggy middles I hate so much. But on very rare occasions we will get so fancy that we make waffles.
Waffles weren’t really a breakfast thing in my house growing up. My grandparents are Pennsylvania Dutch and so the only way we ever ate waffles was with chicken and gravy. A super way to eat waffles if you ever want to try it! I don’t think I can even get behind the southern fried chicken and waffles with syrup. Gimme gravy or gimme death! Or something like that.
So when I branch out into a sweet waffle that didn’t come out of the freezer I’m drawn to the basics. I make them like my grandma did by whipping the egg whites to stiff peaks. I’ve poked around so many different recipes but in the end I stick close to home and just add a few more flavors. Folding in whipped egg whites does give the waffles a slightly eggy taste. You won’t really notice if you’re a syrup or powdered sugar user but it’s there if you’re just snacking away on a plain waffle while the rest bake.
I did come across several recipes that just have you mixing in the whole egg but whipping the egg whites makes them fluffier, especially if you have one of those Belgian-esque waffle makers that make the deep wells that are perfect for syrup catching. I searched all summer for the perfect waffle maker in yard sales and then a good friend of mine gifted me her old one. Waffle heaven up in here! We started with these chocolate waffles last month because why not have chocolate for dinner? But if you want a more subtle flavor go cinnamon and brown sugar. You won’t regret it.

Cinnamon Brown Sugar Waffles
Ingredients
- 2 cups all purpose flour
- 1/2 cup brown sugar, firmly packed
- 1 tsp salt
- 1/2 tsp baking soda
- 3 tsp cinnamon
- 2 eggs, separated
- 1 3/4 cups whole milk
- 1/4 cup vegetable oil
- 1 Tbs vanilla
Instructions
- Whip egg whites in a stand mixer on medium speed until soft peaks form.
- While egg whites are whipping whisk together flour, brown sugar, salt, baking soda, and cinnamon.
- Make a well in the center and mix in egg yolks, milk, vegetable oil, and vanilla, stirring until completely combined.
- Fold in beaten egg whites with a spatula until combined.
- Scoop batter into your waffle maker and cook according to your manufacturers directions.

Meaghan: Hi,I just made your cinnamon sugar waffle and even though it makes a lot of waffles I halved the recipe there is still a lot of batter left over.I am waiting for the 2 waffles to cool a bit and then I am going to put a bit of margarine and some syrup on them.The waffles turned out well and good and tasty. This is the first time that I have been on your website and I am going to have a look at your recipes.I hope that you don't mind it that I copy down some of your recipes to make at home.

These were so yummy. You don’t even need syrup! I made extra and froze them. My picky 7yo have them two thumbs up while stuffing his face.
