If you’re looking for the perfect cookie recipe try these double fudge cookies infused with coca cola syrup!
Y’all know about my love of food challenges right? We’ve talked about it. And if you’ve ever stopped by for one of my monthly ingredient challenge recipes like my lemon curd, apple chips, or stuffed bacon cheeseburgers then you know it gets like all Iron Chef up in here. And those girls are just like my good bloggy friends. What happens when my best bloggy friends and I get together? We pick a theme, usually something pretty broad, and all make something that fits in that theme. And it goes hog wild!
I know what you’re thinking. But, I don’t always do a recipe! Sometimes, like with these kraft paper envelopes, I do a craft instead. I’m back to my old comfortable-like-a-favorite-pair-of-jeans ways with this one though and bringing you a delicious cookie recipe that’s perfect for this month’s theme. Picnics.
Now, I dunno about you buuuuut I’m not really a picnic person. I know, I know, I know. But. Hear me out. These cookies are perfect. Perfect, I say! For picnics. They’re fudgey and rich and they won’t melt when you leave them in your picnic basket to go play football or soccer or whatever people who like to go on picnics do when they’re not eating. What do people do on picnics while they’re not eating?
Anyway, these cookies have Coke in them. As in Coca Cola. When I got to experiment with some Coke recipes for a care package for my family I tried reducing some down to a syrup and adding it to these cookies and O.M.G. That syrup took these babies to the next LEVEL! Legit.
I’ve made them with and without the syrup and the popular vote says the syrup stays. Now, are they gross and disgusting and inedible without the syrup? Uh, no! They’re still absolutely amazing. But in the way that just a hint of coffee you can’t even taste delivers an oomph to chocolate so does Coke to these cookies. Do it. Doooooo iiiiiiiit. And then thank me later. And then make a double batch and keep half for yourself in the back of the cabinet and the rest in the picnic basket. Because they’re just that good.

Double Fudge Coke Cookies
Ingredients
- 2 cups ½ Tbs sugar
- ¼ cup cocoa powder
- 1 ⅛ cup flour
- ½ tsp baking powder
- ¼ cup Coca Cola reduction, optional
- 1 cup chocolate chips
- 1 stick salted butter
- 1 egg
- ½ tsp vanilla
Instructions
For the Coke Reduction:
- Place 2½ cups of Coke (any flavor) in a small sauce pan and bring to a boil. Let boil until reduced to a syrup, about 8-10 minutes. Syrup will continue to thicken once removed from the heat.
For the Cookies:
- Cream together butter, sugar, and vanilla until smooth. Add egg and Coke reduction and beat till combined.
- Sift flour, cocoa powder, and baking powder directly into bowl and mix on medium low until combined. Fold in chocolate chips.
- Using a medium or 2 Tbs cookie scoop, scoop dough onto lined cookie sheet then bake at 350 degrees for 15 minutes.

Can you use the cola syrup you get at the pharmacy for nausea instead of reducing regular coke??!

So I am assuming the Coke reduction needs to be completely cool?

It doesn't need to be cooled all the way down to room temperature but you'll want to let it stand 5-10 minutes to thicken before creaming it in with the butter and sugar.
