Earth Day Cupcakes

Earth Day comes but once a year and even though we like to celebrate the Earth all year round here teacher me just can’t help herself and I love to make these Earth Day inspired cupcakes each year!

I’ve always really loved Earth Day and the fun things you can do with kiddos to celebrate. Now that I’m living with a hippie homesteader the day has a whole new meaning but I still like to celebrate with cupcakes! I loved making these when I was teaching and when you use the same technique that I use when making this gorgeous rainbow frosting you get these sweet stripes of color. Plus enough frosting to make my sister happy.
