These easy apple pie bites are made mini and perfect for lunches, desserts, or even snacks!
Remember that 90 degree week I was telling you about last week? The one that had me making these key lime pie dessert shooters because it was too horrifically hot to turn on the oven? Yeah. I’m over it. Temps dropped to normal for the southern belle out of water and we’re cruisin’ in the 80s with almost no humidity which makes me happy as a clam. And also has me turning the oven on. Crankin’ up the oven had me producing these amazeballs better-than-a-box brownies. And now these apple pie bites.
I’m the kind of person who is ready for fall again on the first day of winter. I love absolutely everything about fall. The weather, football, apples, the beauty of the changing leaves, hoodies, apples, Halloween, pumpkins, apples, fall festivals, bon fires. Did I mention apples?
You know how the internet sort of explodes with pumpkin everything in the fall? This is me and apples. Now that I’ve found out how cheap apples are here during apple season you should expect at least 1 apple recipe a week. Don’t laugh. I’m really not kidding. Apples are easily my favorite fruit and they taste good so many different ways. I’m obsessed with making apple chips because they’re easy and delicious and the perfect crunchy snack. I have already prepped the roommates on the apple chip extravaganza that will be happening here once apples are 99 cents a pound.
But enough about those apple-y things. Let’s dig into these apple-y things. Because oh my woooooooord. These pie bites are so much more satisfying dangerous than making an entire apple pie because you will literally eat half a pie’s worth before you even know it. Kind of like the danger of mini cupcakes. Can you tell how much I don’t care? Really. Zero caring going on over here about my apple pie bite obsession.
They come together super fast and you can use your favorite pie crust recipe or refrigerated crusts. Whatever your fancy. I like to use my favorite pie crust that I use for my poptarts. You can make these as big or as small as you want but I use a 2 inch cookie cutter (aff) for almost literally bite sized pies. Two bites. Gone. Delicious. No regrets.

Easy Apple Pie Bites
Ingredients
- 9 inch pie crust recipe
- 1 medium apple, diced small
- 1 tsp lemon juice
- 2 Tbs brown sugar
- 2 Tbs sugar
- 1 tsp cinnamon
Instructions
- Make and roll out your pie crust to ¼" thickness and using a 2" circle cookie cutter cut 36 circles and set aside.
- Core and finely dice your apple. The smaller the pieces the easier they'll fit on the pie crust rounds. Toss diced apple in lemon juice, sugars, and cinnamon. Let sit for 5 minutes.
- Add a Tbs of apple filling to the center of each pie crust circle and top with a second circle.
- Seal edges using a fork and carefully cut slits in the top crust so steam can escape.
- Bake at 350 degrees from 15 minutes or until crust is golden brown.
Notes
*Make sure your pie crust recipe makes TWO 9 inch pie crusts. One 9" crust will only give you about 9-10 pies.
