Have you ever had a craving to make something only to realize you’re out of a crucial ingredient?  That was me the other day.  I wanted chocolate chip cookies SO BAD but we had used up the last of our eggs for these Omelette Muffins and in my earlier, exhausting 5 store trek I had forgotten to get eggs.  But I had to have these cookies!  So I took to Google and found some interesting substitutes for eggs.  Applesauce, bananas, and this handy dandy little trick I’m going to share with you today.  I started with my favorite chocolate chip cookie recipe which, coincidentally is also the base for these amazeballs bacon chocolate chip cookies.

Now, since I didn’t have two eggs I substituted this instead: 4 Tbs water, 2 tsp vegetable oil, and 4 tsp baking powder.  This is for TWO eggs so if you’re only substituting one egg make sure you cut it in half!  The baking powder will fizz a little bit when it hits the water but that’s a normal chemical reaction.  Science!

The first time I made them they were a little crunchier than they normally are with this egg substitute so if you like your cookies crunchy {or you have an egg allergy in the family} you may want to make them like this all the time!  The second time I made them I reduced the baking time by a few minutes and they were a little softer which is just how I like them!  My friends and family haven’t had a problem eating them either way.  With my medium cookie scoop I get about 2 dozen out of this batch which makes them just the right amount for sharing.

We’ve crumbled them over ice cream, used them in ice cream sandwiches, and as pre-dinner snacks {no appetites were harmed in the writing of this post}.  Deeeelicious!

Egg-less Chocolate Chip Cookies

Yield: 2 dozen
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 2 ½ cups flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup brown sugar, firmly packed
  • ½ cup white sugar
  • 1 cup salted butter, softened
  • 4 Tbs water
  • 2 tsp vegetable oil
  • 4 tsp baking powder
  • 2 tsp vanilla
  • 12 oz semi sweet chocolate chips

Instructions

  1. Combine flour, baking soda, and salt in a small bowl and set aside.
  2. Cream together sugars and butter. In a separate bowl mix water, vegetable oil, and baking powder and allow to fizz for a few minutes. Add into the batter with the vanilla and beat until smooth. At this point you're batter will be a little runnier than normal but that's ok!
  3. Add in flour mixture and mix well. Then add chocolate chips and mix to combine.
  4. Use a medium cookie scoop (or roll about 2 Tbs into a ball) and place onto a greased or lined cookie sheet about 2 inches apart.
  5. Bake at 300 degrees for 18-20 minutes or until golden brown.
