Have you ever had a craving to make something only to realize you’re out of a crucial ingredient?  That was me the other day.  I wanted chocolate chip cookies SO BAD but we had used up the last of our eggs for these Omelette Muffins and in my earlier, exhausting 5 store trek I had forgotten to get eggs.  But I had to have these cookies!  So I took to Google and found some interesting substitutes for eggs.  Applesauce, bananas, and this handy dandy little trick I’m going to share with you today.  I started with my favorite chocolate chip cookie recipe which, coincidentally is also the base for these amazeballs bacon chocolate chip cookies.

Now, since I didn’t have two eggs I substituted this instead: 4 Tbs water, 2 tsp vegetable oil, and 4 tsp baking powder.  This is for TWO eggs so if you’re only substituting one egg make sure you cut it in half!  The baking powder will fizz a little bit when it hits the water but that’s a normal chemical reaction.  Science!

The first time I made them they were a little crunchier than they normally are with this egg substitute so if you like your cookies crunchy {or you have an egg allergy in the family} you may want to make them like this all the time!  The second time I made them I reduced the baking time by a few minutes and they were a little softer which is just how I like them!  My friends and family haven’t had a problem eating them either way.  With my medium cookie scoop I get about 2 dozen out of this batch which makes them just the right amount for sharing.

We’ve crumbled them over ice cream, used them in ice cream sandwiches, and as pre-dinner snacks {no appetites were harmed in the writing of this post}.  Deeeelicious!

Egg-less Chocolate Chip Cookies

Yield: 2 dozen
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 2 ½ cups flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup brown sugar, firmly packed
  • ½ cup white sugar
  • 1 cup salted butter, softened
  • 4 Tbs water
  • 2 tsp vegetable oil
  • 4 tsp baking powder
  • 2 tsp vanilla
  • 12 oz semi sweet chocolate chips

Instructions

  1. Combine flour, baking soda, and salt in a small bowl and set aside.
  2. Cream together sugars and butter. In a separate bowl mix water, vegetable oil, and baking powder and allow to fizz for a few minutes. Add into the batter with the vanilla and beat until smooth. At this point you're batter will be a little runnier than normal but that's ok!
  3. Add in flour mixture and mix well. Then add chocolate chips and mix to combine.
  4. Use a medium cookie scoop (or roll about 2 Tbs into a ball) and place onto a greased or lined cookie sheet about 2 inches apart.
  5. Bake at 300 degrees for 18-20 minutes or until golden brown.

Mine turned in to a mess in the oven. I did use 1for 1 gf flour and ghee The batter was beautiful; jus like it should be. I have never had a problem switching butter and flour. I have been baking with gf for for years. Maybe I will try again.

Adding the additional fat from ghee without eggs to help bind the dough could have been the cause of too much spreading. You could try combatting that either by refrigerating the dough for a few hours to firm up the ghee before baking or by adding more flour. If you decide to add more flour, I'd start with 1/4 cup. Whichever option you choose, bake off one or two tester cookies to see how the spread is before baking the whole batch. If a 1/4 cup of flour alone isn't enough, add more a 1/4 cup at a time and continue baking testers until you get the consistency you want :)

đź‘Źđź‘Ź Girl, you did a fabulous job with your research and putting this recipe together. Dairy puts a cramp in our diet(Lactose) so this was amazing. Of course I had to add my soul into it but it still came out victorious. Moist, rised well, formed well, mixed well-you get the point! Can I meantion you in my cook review, regarding this recipe? Wow! Just, wow! I’ve never been able to get my cookies to have that perfect crispiness that I love, but today I achieved what I think is a perfect crispy chocolate chip cookie! I went to make cookies and already creamed the butter and sugar when I realised I was out of eggs and I came across this substitute and was a bit skeptical that it would be as good, but I’m happy to say that I was wrong. Thank you so much I’ll probably never use eggs again in my cookies!

Used this egg substitute in our cookie recipe tonight and couldn’t tell the difference at all!! I was so bummed because I had already creamed the butter and sugar and then realized we didn’t have any eggs. This totally saved us! Perfect substitute. Thanks so much!!

My 2 yr old boy has alot of allergies. We have to cook all our food from scratch at home with limited ingredients. I count flour as a blessing as its not an allergen for him. We used enjoy life chocolate chips as they are allergy friendly and safe for us. The recipe was too gooey for us to roll balls so I'm not sure what I did wrong as I measured exact. So I made pan cookies with it. And oh my lord they are so so so good. TY so much for this recipe. When we find something safe that's a luxury like this it's so amazing. So delicious. Tastes just like normal cookies. And so easy. Lots of allergy recipes are insanely difficult. Ty ty ty
