German cheese soup is something I haven’t had in many years and the first bite of that warm, cheesy broth brought back so many memories. When I was younger there was a family from our church who had relocated from Germany years before and every year they extended an invitation to the entire church to come over for an Oktoberfest celebration. There was always tons of good food, good friends, and lots of space in the woods on their property to play.
I can remember the bratwursts cooked on the grill, the epic capture the flag battles that raged on well into the evening, and this soup. I had no idea how easy this amazing soup was until I got the chance to attend another Oktoberfest celebration last year. I wasn’t playing capture the flag in the woods anymore but I was super pumped to be enjoying this soup all over again. I even got the recipe out of the lovely hostess. And she gave me a few more for my arsenal. Stay tuned!
Traditionally she uses a stout German beer instead of wine but we’re not beer drinkers around these parts so I subbed with Riesling which is one of my favorite German white wines. Kinda sweet but not overly so and perfect for this soup. Kielbasa isn’t a normal addition to this soup either but since the Hillshire Farmยฎ Polska Kielbasa got rave reviews I’m going to say that it was a welcome addition.
One taste and I was back there, running through the woods and trying to outsmart the other team, groaning when my parents called for me to come in an eat something. That something was generally this soup. I really am so excited to have this recipe now so that I can start my own Oktoberfest tradition! Plus it’s nice to have a little taste of home when I’m so far away.
So if you’re going to be celebrating Oktoberfest this year {and seriously shouldn’t everyone be celebrating?!} be sure to stop by your local Walmart and pick up a package or four of Hillshire Farmยฎ Polska Kielbasa and make this soup! German Cheese Soup
Ingredients
- 12 oz of mild cheddar cheese, shredded
- 14 oz vegetable stock
- 4 Tbs butter
- 2 cloves garlic, minced
- 1 1/4 cup Riesling
- 1 cup heavy cream
- 2 Tbs flour
- 1/2 Tbs onion powder
- 1 inch Hillshire Farm Polska Kielbasa, cut into 1 pieces
Instructions
- In a medium sauce pan on low heat melt butter then add onion powder and garlic and sautee for 1-2 minutes or until garlic is fragrant. Add flour and whisk, cooking until flour is golden brown.
- Add vegetable stock and heavy cream, stirring until no lumps remain.
- Then add Riesling and Kielbasa and bring to a boil. One boiling reduce to a simmer and simmer for 15-20 minutes or until slightly thickened.
- Add in cheese a 1/2 a cup at a time, stirring until completely melted each time.
- Serve warm with crusty bread.

This is similar to my German potatoe soup, I also add browned kielbasa and usually velveeta cheese. I will ry yours this winter for sure, Thanks for sharing

My grandfather was German and would always make this German Cheese Soup when we came to visit… this looks like it would be close to his recipe. I’ll have to compare and make it so it brings back his memory. =)

I love the idea of combining alcohol, cheese, and kielbasa. My teenage years were spent in a little city with strong German influence from the large amount of German immigrants, so Oktoberfest is very familiar to me. Love the recipe; so lucky you are to have that lady share her recipe with you. I love hand-me-down recipes. ๐
