Potatoes are good for breakfast, lunch, or dinner but they shine in this breakfast hash with spicy breakfast sausage and sweet maple syrup!
We haven’t done a big grocery shopping trip in awhile. So other than some potatoes, frozen sausage, and homemade bread the cupboards and fridge are pretty bare. Since the roommates end up taking whatever is leftover from what we’ve cobbled together for dinner to work with them I’ve found myself standing in the kitchen staring into the fridge more often than not wondering what the heck to make for lunch. I don’t know why I bother, it’s literally bachelor pad empty in there. Maybe I keep hoping that little light will inspire me or something.
There are probably dozens of ways I like to eat potatoes whether it’s crispy fries, mashed potatoes, potato soup, or in a casserole, but after awhile it all starts to taste the same. But since I haven’t enjoyed a good potato for breakfast in awhile I wanted to give it a go with a good hash. I prefer hash to hashbrowns {at least at home} because it’s easier and I never seem to get that crunch on homemade hashbrowns that I love so much. If you have any secrets to that do share!
The sweetness in this hash from the maple syrup plus the spiciness from the sausage are the perfect combination. Mix them both with the hearty comforting bite of potatoes and this is a hash I can eat over and over again. Breakfast for dinner, breakfast for breakfast…whatever works! Especially with a couple thick slices of homemade bread slathered with butter. Everything is better with butter, right?
What I especially love about this recipe is that it’s completely customizeable. Have some carrots you want to toss in there? Some peppers? Hot sauce? Whatever floats your breakfast hash lovin’ boat. Throw it in the pan, cook it up, and serve it for breakfast, lunch, or dinner! I see a lot of hash in my future this week until we get to the grocery store. Which means I will probably hate it by next week 😉 But it’s better than standing in front of the fridge with no idea what to eat!
Maple Sausage Breakfast Hash
Ingredients
- 4 medium potatoes, diced
- 2 Tbs olive oil
- 1 tsp onion powder
- 1/2 pound ground breakfast sausage
- 3 Tbs maple syrup
- Salt and pepper to taste
- 2 Tbs water
Instructions
- Add oil to a large skillet and brown ground sausage. Move to a plate and set aside.
- Add potatoes to pan and brown on all sides. Return sausage to pan and add salt, pepper, onion powder, and water.
- Cover and cook on medium heat for 15-20 minutes or until potatoes are tender, stirring occasionally.
- Stir in maple syrup and serve immediately.
