This homemade mint chocolate chip ice cream is the perfect sweet treat to cool off on a hot summer day!
We’ve officially reached that time of year where I don’t find it oppressively hot {the bestie not so much} but it’s definitely too warm to turn on the oven any more than absolutely necessary. Especially when we can’t vent the kitchen by opening up the sliding door lest one of the cats escape. Little boogers. So that leaves no bake desserts and ice cream.
I really love homemade ice cream but without an ice cream maker, ice cream bases generally fall into 2 camps. Cooked over the stove and then churned in a stand mixer or hand crank machine {which is how my grandpa used to do it} or made with sweetened condensed milk. I’m not a huge fan of the no bake condensed milk flavor when it comes to ice cream because I think it makes it overly sweet which means by the time I’ve added homemade sprinkles and chocolate sauce it’s just too much. The no churn aspect is great but I like my toppings!
So enter this snazzy ice cream maker I won last December at a blogger event! I’ve created several different ice cream flavors but the only other one I’ve shared with you guys was this red wine ice cream that was the BOMB. Seriously. So good. Make it, try it, love it, refuse to share it with anyone else in the house 😉 But now that I’ve finally figured out the perfect base for no cook, churned ice cream you’ll be seeing ALL THE RECIPES! Because this is stupid simple and so amazing.
Unfortunately you cannot turn this recipe into a no churn recipe because then you’ll be left with a bunch of sugar crystals in your ice cream. The churning dissolves the sugar. I’ve heard tell you can make this with a frozen stand mixer bowl with similar results but I have not personally tried this. If you give it a go, let me know in the comments!

Mint Chocolate Chip Ice Cream
Ingredients
- 1 cup 2% milk
- 1 cup heavy cream
- 1/3 cup sugar
- Mint extract to taste
- 1/2 cup mini chocolate chips
Instructions
- In a medium sized bowl whisk together milk, heavy cream, sugar, and extract until combined.
- With your ice cream machine turned on slowly pour in your ice cream base.
- Let it churn for 10 minutes and then add your chocolate chips with the machine still on.
- Allow to churn for another 10 minutes until thickened.
- Transfer to a freezer safe container before storing.

Thank you for 'bringin' minty back'... Mint Choc Chip is my favourite flavour of ice cream and one that seems to have fallen behind a whole string of bizarre Anavnt Garde flavours, lordie knows why, old skool rules when it comes to ice cream in my mind!

If I were an ice cream lover, this would be my favourite flavour. Whenever I do eat it, this is my go-to! Mint is always so refreshing... especially in the sweltering heat.

Yay! This is a good base, it's similar to the one we used ages ago to make our first batch of ice cream, but it was vanilla and boring. Mint chocolate chip is way more fun!
