Last weekend we went away for the holiday to a beautiful property in the middle of nowhere. It was so blissfully quiet, you could hear the wind sweeping through the trees and dare I say it I even enjoyed cooking over a campfire all weekend. I think the only thing I didn’t like was sleeping on the couch all weekend. Next time I’m totally calling dibs on the extra bedroom. Our last night there it rained which made campfire cooking kind of impossible. So we ventured into town for some dinner and since the only thing we all could agree on was Italian we landed at Olive Garden.
It’s been a very long time since I’ve been to an Olive Garden and, let’s face it, it’s one of those restaurants where I want at least one of everything. And after sleeping on the couch all weekend I certainly deserved some alcohol so I ordered a peach bellini. I’m not a huge peach fan but I figured I can’t really dislike anything made with alcohol…so I gave it a whirl. Oh man. I wish I’d been able to drink it faster so I could have gotten two because it was SO good!
After my first sip I looked across the table at my roommate and said “I have to recreate this for the blog”. I don’t say that about restaurant food a whole lot. I should. I’m actually surprised I don’t have a whole copycat recipe section around here, to be honest. Because sometimes you just gotta have a dish from a certain restaurant {can we cay Chipotle’s cilantro lime rice??} but your wallet is quietly reminding you to stay home because you’re poor. Yeah.
But while I was enjoying this Olive Garden treat to the last drop I was silently making a list of what I’d need in my head to get this right. And I rarely get it right on the first try. There’s a lot of recipe testing in food blogging {food blogging is a hard job, y’all.} but sometimes when you’re making a drink you can get it pretty dang awesome on the first try! It’s not like with baking or cooking where you have to make it more than once to adjust this or fix that or change baking time to make sure blog land can recreate your deliciousness.
So to get a drink right on the first try AND not have to share because no one else is home is. so. awesome. Plus, there’s only three ingredients. Hello! Easiest drink ever! This one is perfect for summer but I also think it would make a super fancy drink for a holiday party, Mother’s Day brunch, or bridal shower, too! It’s also super customizable because all you need is frozen fruit + sweet white wine + honey. Done!

Peach Bellini
Ingredients
- 1 cup frozen peaches
- 1 cup sweet white wine, I used Riesling
- 1 Tbs honey*
Instructions
- Add frozen peaches and honey to a blender and blend until smooth.
- Add in white wine and blend until combined and drink reaches your desired consistency.
Notes
*I used honey because it goes so well with peaches but if you use a different fruit you may want to try a different sweetener
