Peppermint meringues are a cool and refreshing treat perfect for your holiday table, as gifts for friends, or to take to an office party!
The holidays tend to be a pretty busy time for me since moving from Virginia to Michigan almost 2 years ago {I can’t believe it’s been that long!} Last year I was all caught up in getting gifts together to put in the mail because I couldn’t afford to go home. I’ve never had to mail Christmas presents to long distance family before. It was a little stressful! This year I’ll be spending some time traveling and actually get to visit my family which I’m so looking forward to <3 Especially because my cousin is expecting her first baby at the end of November. I can’t wait to meet him!
Lots of travel time means simple recipes that hold up to shipping or last awhile. I still want to leave my roommates with fun treats while I’m gone after all. These meringues are so simple to make and have kept for up to two weeks in an air tight container in the fridge.
Back in the spring my friend Paige dropped by to share a recipe for some fruity meringues. I originally tried to carry the fruity theme and make orange creamsicle meringues back in the summer. But meringues + and un-air conditioned house does not a perfect match make. After sitting on the counter for not even 30 minutes they completely collapsed on themselves and became a sticky gooey mess. Not good. I knew I couldn’t try meringues again until it was either cold outside or we moved. And then orange would be a less than seasonal flavor.
I thought I’d have to wait until next spring to give it another go. Until I stumbled on this recipe on Paige’s site. Jackpot! Her recipes are super simple to follow and because we recently moved into a new house with central air they set right up without any problems and I didn’t have to wait until spring! I love the red and white swirl these have vs dying them a solid red. They just remind me of candy canes this way! They’ll be perfect to send to work with my roommate!
Peppermint Meringues
Ingredients
- 2 egg whites
- 1/2 cup powdered sugar
- 1/4 tsp peppermint extract
- Red gel food coloring
Instructions
- In the bowl of a clean stand mixer beat egg whites until foamy and fluffy.
- Add powdered sugar 2 Tbs at a time and beat until stiff peaks form and sugar has dissolved.
- Add peppermint extract and mix well.
- Fit a piping bag with a Wilton 1M star tip and using a skewer, straw, or chopstick draw two lines up the inside of the piping bag directly across from each other.*
- Add meringue to piping bag and pipe into 1-1 1/2 inch swirls onto a baking sheet lined with parchment paper or a silicone baking mat.
- Bake at 200 degrees for 90 minutes. Once finished baking leave meringues in the oven for 30-60 minutes.
- Store in an air tight container in the fridge for up to 2 weeks.
