Depending on the year my New Years plans range from going out to a big party, heading to a friend’s house to play games and watch the ball drop in our pj’s, or chilling at home with my family surrounded by a game, lots of food and drinks, and Dick Clark’s Rockin’ New Years Eve on in the background. Seriously. Can people participate in a relaxing New Years Eve at home without that show on in the background? 

We rarely ever get fancy pants enough at our house to indulge in champagne but when I was creating an exclusive cocktail for the Project Christmas Cookbook I splurged for some and decided to again. Worth it! My mom thinks there is no such thing as good champagne but I think she’s wrong. Sorry, Mom. I think that quality champagne is light and fruity and slightly sweet but not overly so. I had the best champagne of my life at a wedding and I so wish I’d been rude enough to ask someone the brand!

Armed with champagne and lots of leftover pomegranate seeds from when I made this delicious, amazing, decadent, so-good-I-had-to-give-it-away chocolate cake with mascarpone pomegranate frosting. It was my first adventure with mascarpone and I promise that it will not be the last. I’m thinking some kind of mascarpone filling when I get brave enough to try Goodie Godmother’s macarons. Anyways that cake equalled two things. Lots of leftover cake and lots of leftover pomegranate seeds. No idea why I thought I’d be able to use up 16oz of pom seeds before they went bad. Champagne to the rescue.

It wasn’t hard to mash the juice out of the seeds and if I’d been more diligent less lazy I probably would have gotten even more. But I got bored with mashing them after about 10 minutes. Luckily I got exactly the right amount of pom juicy goodness.

You can absolutely make this a kid friendly mocktail by replacing the champagne with Sprite or Ginger Ale or sparkling grape juice. That was always my favorite as a kid. Sparkling White Grape juice. It comes in a champagne like bottle, bubbles like champagne, but is kid friendly and alcohol-free. The kids will feel like grown ups but you won’t get arrested. Always a lofty goal 😉

Pomegranate Champagne Spritzer

Ingredients

  • 12 oz champagne
  • 8 oz sparkling water
  • 4 oz pomegranate juice
  • 1/2 cup pomegranate seeds, optional for garnish

Instructions

  1. Combine sparkling water and pomegranate juice then pour 4 oz into each glass.
  2. Top with champagne and garnish with pomegranate seeds
