For father’s day this year we’re spending some time with my mom’s family and participating in a pot luck lunch.  I love pot lucks.  They just satisfy my need to never show up empty handed to someone’s home.  My sister and I decided to make potato salad.  I loooove ranch dressing and finally discovered how to make my own!  So what better way to make potato salad than a super duper easy ranch potato salad??  I loved the cheese on top but I think next time I make this I’ll also top it with some bacon.  Because bacon.  That’s why.

The dressing for this potato salad is super easy and the longer you let it sit in the fridge the better it’ll taste so make this the night before and you’ll be all ready for potato salad goodness the next day for your pot luck or picnic!  If you’re going to make this for an outdoor picnic just be careful because it does have ingredients in it that can spoil in the hot sun!  And you don’t want to send anyone home with food poisoning, right?  Right.

Ranch Potato Salad

Yield: 4 servings
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

Ingredients

  • 2 1/2 pounds red potatoes
  • 16 oz sour cream
  • 2 Tbs ranch dressing mix
  • Bacon, optional

For the Ranch Dressing Mix:

  • 2 ½ Tbs dried parsley
  • 2 ½ tsp onion powder
  • 2 ½ tsp garlic powder
  • 2 tsp dried dill
  • 1 tsp dried chives
  • 1 tsp salt

Instructions

  1. Cut potatoes into ½ inch cubes and boil until tender, drain and let cool.
  2. Mix 2 Tbs dressing mix into sour cream and pour over cooked potatoes.
  3. Let sit overnight for the flavors to really develop.
  4. Add cooked and crumbled bacon and cheddar cheese for serving if desired.
