Trail mix bites make snacking even easier! And these babies are a road trip must have!
If there is one thing that is an absolute must have when I go on a road trip it’s trail mix. Just ask anyone who’s ever spent more than an hour in the car with me and they’ll tell you that I require trail mix, a bottle of water, and the right to control the radio. I will stop by the store or a gas station and buy one of those giant purple bags that comes with my trail mix must haves: raisins, peanuts, almonds, cashews, and chocolate candies.
This is a perfect snack when your only job is reading the directions {this is a throw back to college when using GPS on our phones to drive somewhere wasn’t really a thing and whenever Bestie and I wanted to take a last minute trip we printed directions off MapQuest} and controlling the radio. It’s a less than perfect snack if you’re the driver. While being the driver on a road trip is not my preference sometimes I get stuck behind the wheel and trail mix gets messy.
Imagine speeding following the speed limit down the highway and trying to get a loose mix of nuts, dried fruit, and candy from the passenger seat to your mouth without taking your eyes off the road and not losing a peanut in your bra. Or all over the floor of the car. Or stuck forever between the seats of your car until you decide to one day hit your adulting goals and have it detailed. It’s not pretty.
So I came up with the ultra necessary life hack of trail mix bites. These aren’t a new hack by any means but most of the trail mix bites you’ll see are a disk of chocolate sprinkled with your fave trail mix goodies and those, quite frankly, are ugly. There, I said it. So instead I coated all my goodies with chocolate and let them set into these delicious bite sized clusters. Just whip one of these babies out of the bag, pop it into your mouth, and bop your head to the tunes coming out of the radio while you enjoy the sweet salty goodness.

Trail Mix Bites
Ingredients
- 1 cup dark chocolate chips
- 1/8 cup almonds, roughly chopped
- 1/8 cup peanuts
- 1/8 cup cashews, roughly chopped
- 1/8 cup craisins*
Instructions
- In a double boiler or microwave safe container melt chocolate chips until smooth.
- Allow to cool for 2 minutes and then stir in nuts and dried cranberries.
- Spoon into mini muffin tins and allow to set in the freezer for 5 minutes before turning out onto a clean plate and refrigerating for 15 minutes until completely set.
- Store leftovers in the fridge.
Notes
*You can also use raisins or other dried fruit. Craisins are what I had on hand.

UGH, so easy and so perfect! This is right up my alley -- I could snack on chocolate covered nuts ALL day, but this is 10 times better!

Yes! The grocery store always gets me with those purple bags of chocolate covered nuts in the checkout line but these are SO much better!

These sound fantastic, but the notion of more then an hour in a car is my idea of hell, I think I hate driving more than flying... I have no idea when it happened I used to travel long haul all the time but at some point in time the idea of spending hours doing nothing but going somewhere made me grumpy, now if it is longer than an hour away I do almost everything to avoid it ;)

I certainly have my car ride limit and it's MUCH shorter if I'm the driver but I don't mind a good 3 hour car ride to the beach or something. Good music, windows down, someone else driving, and great snacks. Love it!
