Enjoy summer with this tart and simple lemon curd. It comes together in just 15 minutes and is a lemon curd recipe good enough to slather on anything. Even a spoon!
15 Minute Lemon Curd

  • 6 large egg yolks
  • ½ cup + 2 Tbs sugar
  • ½ Tbs lemon zest*
  • ¾ cup lemon juice**
  • 8 Tbs salted butter
  1. Combine lemon zest and sugar on a clean cutting board and macerate with the back of a spoon or flat edge of a knife until sugar is a light yellow color and fragrant.
  2. Add sugar/zest mixture, egg yolks, lemon juice, and butter to a medium sauce pan over medium low heat.
  3. Whisk constantly until the mixture is thick enough to coat the back of a spoon, about 5 minutes.
  4. Strain through a fine mesh strainer and store in an airtight container for up to 2 weeks.

*For a less tart curd substitute with the zest of one small orange
**For a less tart curd substitute with 1/4 cup orange juice and 1/2 cup lemon juice
