When I was in high school bagels were generally something I threw in my bag because I was running late for school and had to rush out the door before I got stuck behind a bus or two on my drive to school.  It was easy to smear with jelly or cream cheese when I got to school and on about my day I went.  Bagels were firmly in the breakfast category for me until I went to college.

I went to college in a small town in very rural Virginia.  When I say small town I mean it.  The town’s population doubled every time school was in session…yeah, that’s how small.  But it was your typical college town with lots of places to eat and hang out.  And of course all the local places were the best.  If you’re in North Carolina, Virginia, or West Virginia you might have heard of Macado’s.  It’s a weird mix of a bar and sandwich place.  They make other things like a couple pasta dishes and some yummy quesadillas but when it comes to sandwiches they shine.

This is where I was introduced to the bagel as a sandwich vessel.  YUM!  My bagels went from breakfast to any time I want to pile lots of meat and melty cheese on them.  And I realize that I’m writing about bagel sandwiches and including pictures of a bagel smeared with cream cheese. I do what I want!  But when I got on my homemade breads kick and stopped buying breads from the store I really really missed bagels.  Whether they were for breakfast or lunch I missed ’em.

I had barely gotten the hang of sandwich bread {and to be honest 50% of the time my bread wasn’t turning out that great anyway} so I was a little leery about making bagels.  Especially because they required a little more effort than your typical sandwich bread.  One day, however, the need for bagels overrode the fear of making them and I took to my bread machine.

Ingredients added, dough cycle started, and I waited.  The most annoying part of the whole process is rolling them out in my opinion because I just cannot for the life of me figure out how to make them bigger.  Seriously.  It’s a problem.  I end up with minis every single time.  Oddly enough I’m fine with this because it means I get to eat TWO without feeling guilty 😉

Just DO NOT skip the baking soda water bath step.  I’ve done it with and without the water bath and without it they are tiny brickets of sadness.  You don’t want to make sad bagel brickets do you?!  The answer is no.

Bread Machine Bagels

Yield: 10 bagels
Prep Time: 2 hours 30 minutes
Cook Time: 50 minutes
Total Time: 3 hours 20 minutes

Ingredients

  • 1 cup water
  • 1 tsp salt
  • 1 ½ tsp sugar
  • 3 cups bread flour
  • 1 tsp active dry yeast

For the Water Bath:

  • 3 quarts water
  • 1 Tbs baking soda

Instructions

  1. Add ingredients to your bread machine in the order specified by the manufacturer and set to the dough setting.
  2. When dough cycle finishes turn the dough out onto a lightly floured surface and separate into 10 equal pieces.
  3. Roll each piece onto a long rope and form into a circle, twisting and pinching the ends to seal them. Leave a hole about 1½" in the center.
  4. Place on a baking sheet, covered with a towel and allow dough to rise for 30 minutes.
  5. Preheat oven to 400 degree and while the oven is preheating boil 3 quarts water and 1 Tbs sugar.
  6. Simmer risen bagels for 5-6 minutes per side and drain with a slotted spoon.
  7. Place on a greased or cornmeal sprinkled baking sheet and bake at 400 degrees for 25-30 minutes.

You say to not skip the baking soda water bath step yet the ingredients portion of your instructions say water and sugar bath?

Thanks for catching that! When I updated my recipe card to a different plugin I noticed that a lot of the recipes imported original versions rather than updates. Originally I used sugar and then found better results with baking soda. I'll go in and change it now. Thanks again!
