1. I can’t believe it took me this long to leave a comment. I think it’s rather brilliant that you hid the avocado in the cookie. Being like your sister and a total avo-fiend, I don’t often use them in baking because I’m more likely to just eat any ripe avocados with a spoon, but I love all the healthy fats and good things they add to this recipe.

    • Yes! I love that about these cookies too. And I especially love how it doesn’t change the taste. All the good fats and none of the avocado flavor.

    • I was skeptical too but the avocado keeps these nice and soft on the inside but crunchy on the outside. Delicious!
