As a person with such a deep seeded love for Mexican food it certainly took me absolute ages to try Chipotle for the first time. Actually. That’s not entirely true. This one time in college, {don’t all the best stories start that way?} my best friend and I were visiting the big city and decided to try Chipotle for the very first time. I don’t remember what I ordered but I do remember that I didn’t like it. Not even a little bit. Isn’t that sad?
After lots of trial and error I’m happy to report that I have since corrected this terrible mistake in judgement and am now currently obsessed with enjoy Chipotle quite a lot! The more I spend try at Chipotle the more I want to recreate those same delicious tastes at home. Food blogging is a hard job, y’all. But someone’s got to do it 😉
So, when I was invited to participate in a monthly ingredient challenge where the ingredient of the month was cilantro I knew I had to try my hand at that cilantro lime rice. It’s the basis for my absolute faaaavorite Chipotle yumminess and now one of my favorite rice sides to throw together for any Mexican dish I’m making at home like my amazingly easy chicken enchiladas or pretty much anything I could make with these homemade tortillas.
This recipe was crazy simple. You will want to make all of your Mexican dinners with this rice from now on once you realize how simple it is! Its very easy to throw together last minute. Use it as the base for your next at home Chipotle feast, alongside some tacos, or just pair it with black beans for a frugal but filling weeknight meal. I wish I’d discovered ways to eat more frugally in college that did not involve Ramen or spaghetti…

Cilantro Lime Rice
Ingredients
- 4 cups rice, cooked
- The juice of one lime
- 2 tbs cilantro, roughly chopped
Instructions
- After rice is cooked and water is absorbed, stir in the lime juice and cilantro.
- Topped with more cilantro for garnish if desired.
- To infuse the rice with more flavor add the juice of half a lime to the boiling water as it cooks.
