Y’all might not know it but a very important day in my life is right around the corner.  In just six days.  Yeah, that’s right.  It’s my birthday!  I absolutely love birthdays and enjoy making a huge deal out of other people’s birthdays.  But we don’t have very many birthday traditions in my family so when my own birthday rolls around I’m kind of at a loss of what I want to do.  My roommates and friends always ask me and I just shrug and say whatever.  Or nothing.  Or I don’t care. 

But six months after moving halfway across the country I’ve finally decided that I want to create some new traditions.  Especially for my birthday.  So that next year when someone asks me what I want to do for my birthday I can say…THIS!  Long standing family traditions are comforting but creating new ones is kind of fun and exciting.

Since I decided to celebrate my birthday all week long {#noshame} I’m starting with a fall twist on my new favorite way to eat dessert.  Shooters.  I made these key lime dessert shooters awhile back and y’all went just as crazy for them as I did.  So what better way to kick off my birthday week than combining my two favorite desserts: apple pie and cheesecake?  None.  The answer is there is no better way.  I probably won’t even share these!  Don’t tell the roommates 😉

My mother will literally kill me if I ever share my grandmother’s cheesecake recipe on the blog because it is a secret family recipe.  One of the very few we have that you might lose a limb for sharing outside of the family.  But I don’t think you’ll mind this easy 2 ingredient, no-bake cheesecake instead.  Layer it with store bought or homemade apple pie filling and get ready to not share with anyone dig in.

I don’t like whipped cream on my cheesecake but garnish this with some if you like or do what I did and drizzle a little caramel sauce over the top.  You won’t be sorry you did.

Caramel Apple Cheesecake Dessert Shooters

Caramel + apple pie + cheesecake = cheesecake dessert shooters worthy of your next dinner party but good enough for a weeknight.

Ingredients

  • 8 oz cream cheese, softened
  • 14 oz sweetened condensed milk
  • 3 Tbs caramel sauce, divided
  • 1/2 cup apple pie filling

Instructions

  1. In the bowl of a stand mixer fitted with a whisk attachment whisk together cream cheese, sweetened condensed milk, and 2 Tbs of caramel sauce until completely incorporated.
  2. Spoon the cheesecake mixture into your glass and alternate it with apple pie filling, finishing with cheesecake.
  3. Garnish with caramel sauce and whipped cream if desired.
