Hi, all!  I’m Tara from An Aiming High Wife and I’m so happy Meaghan asked me to be here today to share a summer cocktail with you all as part of her summer cocktail series!

This delicious pineapple mint manjo mojito is a tropical twist on the old favorite mojito!

If you’re looking for a little summer escape, you have to try this pineapple mint mango mojito. My husband claims this drink tastes just like vacation!

This spring when picking what fresh herbs we wanted to plant at the new house we came across a pineapple mint plant. Since we are big fans of mint in iced tea, baked goodies and mojitos we knew we had to give the pineapple mint a try! Mint is one of the only plants I can keep alive, mostly because its a weed and extremely hard to kill! Since we have planter overflowing with mint I decided to create some new drinks to enjoy this summer.

To make this yummy pineapple mint mango mojito you will need a fresh mango, pineapple soda, rum, a lime, and fresh picked pineapple mint! If you aren’t like me and did not buy a pineapple mint plant on a whim; or if you’re like me and can’t keep a plant alive then you can substitute regular mint for the pineapple mint.

The pineapple mint’s natural flavor was enhanced by the pineapple soda. If you are planning on using regular mint I recommend letting the mint soak in a little bit of pineapple soda for a few minutes before mulling it with the fresh lime!  You will use half of a small mango per drink. Cut the mango and put the fruit into a bowl. Mash up your mango with a mojito muller and keep off to the side.

In your glass mull a slice of lime with 3-4 pineapple mint leaves. Then add 2 overflowing tablespoons of the mango puree you made earlier. I always put extra mango in my drink, where my husband prefers extra rum. Add your ice, then fill with pineapple soda leaving enough room to top with rum. After you add the rum give your drink a light stir and garnish with a lime slice and a sprig of pineapple mint.

Everyone needs a vacation sometimes, unfortunately life doesn’t always make vacationing easy. So when its been a long day and after we have tucked our little miss into bed, my husband and I will sit outside with the sound of lullaby playing from the baby monitor and enjoy a drink while we drift off to a daydream vacation. So enjoy your pineapple mint mango mojito and embrace vacationing at home!

Pineapple Mint Mango Mojito {Guest Post}

Yield: 2 drinks
Prep Time: 10 minutes
Total Time: 10 minutes

Ingredients

  • 4 slices of lime
  • 6-8 leaves pineapple mint
  • 1 Mango
  • 2 oz Rum
  • Pineapple Soda
  • Ice

Instructions

  1. Peal and Pit Mango. Use mojito muller to mash up mango until it becomes a thick mango puree.
  2. In two separate glasses mull one slice of lime along with 3-4 of the pineapple mint leaves.
  3. Fill glasses with ice
  4. Add 2 Tablespoons of Mango puree to each glass.
  5. Top with Pineapple soda leaving enough room for 1oz of rum to be added to each glass.
  6. Finish off with an ounce of rum and stir lightly.
  7. Garnish with a lime slice and sprig of pineapple mint.
