I remember my grandma best when I’m in the kitchen. I mean I’ll never forget how she used to listen to me complain about the stresses of school or offer advice after my parent’s got divorced. But I can really picture her when I’m in the kitchen, my finger dragging down the page of one of her vaguely written recipes, whipping up some of her favorites that will never not make me think of her.

As far as Christmas cookies go there will never be a recipe better than her sandtarts. Soft but crispy butter cookies that are best served warm and practically melt in your mouth. Then there’s her cheesecake. A secret family recipe you’ll never see on the blog because it’s just that important to us. There’s pounded steak and mashed potatoes which I request every year for my birthday. Chicken and waffles {with gravy, not syrup!}, shoo fly pie, biscuit cookies, and cream cheese frosting.

But when I think holidays and I think fudge I think of this soft peanut butter fudge. Just four ingredients and 10 minutes are all it takes to whip this up. Each bite melts in your mouth and takes me back to my childhood, standing on a chair helping my grandma bake at Christmastime. I was the official Hershey’s kiss unwrapper for the peanut butter blossoms. Good thing she always got extra in anticipation of me eating almost as many as I unwrapped.

You won’t need the microwave on this one but it is just as simple! I won’t call this a traditional recipe because we skip the corn syrup but the addition of marshmallow fluff is what helps this set up so fast but also keeps it creamy. You won’t want to miss this recipe!

Soft Peanut Butter Fudge

Yield: 24 pieces
Prep Time: 30 minutes
Cook Time: 10 minutes
Total Time: 40 minutes

Ingredients

  • 1/2 cup milk
  • 1 pound powdered sugar
  • 1 16 oz jar peanut butter
  • 1 13 oz jar marshmallow fluff

Instructions

  1. Add milk and powdered sugar to a medium sauce pan set over medium high heat and bring to a boil. Boil for 5 minutes.
  2. Add in marshmallow fluff and stir until smooth.
  3. Remove from heat and add peanut butter, stirring until completely incorporated.
  4. Pour into a lined and greased 8x8 baking dish and allow to set for 30 minutes or until completely cool.
  5. Cut into squares and store in an airtight container.

I followed directions exactly, even premeasured all ingredients by my digital scale, but it seems the 5-minute cook time was too long. I stirred continuously (I didn't know not to) and by the end of 5 minutes, I had a thick layer of gritty hard stuff on the sides and bottom of my pan. This was with having the burner on the lower end of medium high heat. After I added the powdered sugar, it got worse and turned into something almost unmixable. It got a bit better when I added the peanut butter but it seems gritty as I was putting it in the pan. We'll see. It's cooling now. I might have to adjust the boil time or the burner for the next time I make it. Sure smells good!

I made this a few hours ago and it hasn’t setup, it remains sticky/goopy. Any thoughts on what I did wrong? I believed I followed the directions precisely.

Hi there. If it's still goopy it's likely you added too much liquid. Aside from the milk, the ingredients should all be relatively solid/hold their shape at room temperature, especially with the addition of the powdered sugar. You can try putting it in the fridge and see if that helps it come together so you can slice it.

SO happy you shared this recipe. I have it from 50+ years ago with amounts like "jar" which were different amounts than they are now. I was ecstatic to find actual amounts. Anyway, my Pennsylvania mom also added 1 tsp of vanilla and 1 tablespoon of cocoa powder (I used Special Dark cocoa powder.) Can't believe I haven't made this for at east 30 years! It's soo good!
