I love a good party!  And New Years Eve is probably one of my favorite reasons to throw one.  I love watching the ball drop, kissing someone special at midnight, good food, and the promise of a brand new beginning.  So when I do get a chance to throw a New Year’s Eve party I generally end up inviting everyone I’ve ever met!

When you’re throwing together a party for a lot of people you want appetizers that are quick and easy to put together.  Nothing beats some ingredients you can spear with a stick to make it simple for you to prepare and simple for your guests to carry around in one hand with a drink in the other.

Tomatoes and mozzarella are one of my sister’s favorite food combinations.  She’ll eat them on toast, with a fork, and when I told her I was making these she demanded them at our New Years Eve festivities this year!  The basil olive oil takes them to the next level and who doesn’t love an appetizer you can throw together in minutes for a big crowd?  For olive oil with the best basil flavor let it sit overnight so the basil can infuse into the oil and wow your guests when they drizzle or dip their caprese bites!  Add as much or as little basil to your olive oil as you like!  It’s totally up to you and your preferences.

I used a block of mozzarella that I cut into wedges because it’s what was on sale but you could also use small balls of cheese you can find in your gourmet cheese section of the grocery store.  Use just one tomato and one piece of mozzarella for each bite or double or triple them up to keep people from hovering around the food table all night!

Caprese Bites with Basil Olive Oil

Yield: 3 dozen
Prep Time: 10 minutes
Total Time: 10 minutes

Cherry tomatoes and mozzarella make the easiest, make ahead caprese bites. They are the perfect appetizer for your next party or office gathering!

Ingredients

  • 10 oz cherry tomatoes
  • 4 oz mozzarella cheese
  • 1/4 cup olive oil
  • 1 tsp basil
  • Toothpicks or skewers cut in half

Instructions

  1. Combine olive oil and basil and set aside.
  2. Cut mozzarella into chunks or wedges
  3. Assemble bites by pushing one tomato and one wedge or chunk of mozzarella on a toothpick or two of each on a skewer cut in half.
  4. Drizzle olive oil and basil mixture over the top right before serving.
