When Meaghan asked me to be part of her Summer Cocktail Series the first drink that came to mind was an Irish coffee. But seriously, in the dead heat of summer who wants to be drinking a hot drink? So I tossed around a few other ideas, but nothing quite struck my fancy. I kept going back to the Irish coffee. And what better way to make it summer worthy than to ice it?
It’s no lie that summer heat gets me down! I’m a fall/spring kind of girl, I even love winter. But once the heat of summer hits I wilt. Like hard core. Meaghan loves to laugh at me while I’m melting and she is super happy. I guess it must be something to do with being a southern girl, she loves our Michigan summer. 80’s are cool to her.
Since I’m not a coffee drinker I had to pull out our roommate’s coffee maker, and then go get coffee. Seriously how did I not think that through? Because I needed to test drive this recipe on some non-biased drinkers I made up a couple batches to share with my friends. They were coming over for dinner and I wanted to know what they thought.
They’re constructive tips were super helpful! And that means I get to give you guys the very best recipe for a mint Irish iced coffee. First thing you’ll want to do is make a small, strong batch of coffee and turn that into ice cubes! Just make sure the coffee is cooled a bit before you put it in the ice makers. You don’t want melted coffee in your ice.
While the coffee ice cubes are sitting enjoy a lovely dinner with friends! Nothing beats getting to go outside, grill some locally raised chicken and ribs, and enjoy some veggies straight from the farmers market. Then when your guests are happy and full pull out dessert and after dinner drinks.
I made a full pot of coffee so we’d have enough for everyone, but you can do an individual sized as well if you don’t want to share. I won’t judge. I let the coffee cool before adding the liquor, but you can put it in hot and then pour over ice if you want.
My recipe is based off of a 12 cup pot, feel free to make it stronger or weaker based on your preferences, but with this recipe you’ll get a nice bit of flavor without getting your guests drunk. No matter how many cups of iced coffee you make them drink to test the recipe!

- 12 cup pot of strong coffee
- ¼ cup heavy cream
- ⅓ cup mint liquor
- ⅓ cup Irish cream
Prepare coffee stronger than usual and allow to cool. Freeze some into ice cubes and store the rest in the fridge or brew a fresh pot when ready to serve.
Pour remaining (or fresh) coffee over frozen coffee cubes and stir in heavy cream, mint liquor and Irish cream liquor and stir well.
Serve with whipped cream and drizzled chocolate if desired.
