I can honestly say I’ve never met a mug of hot chocolate I didn’t like. White hot chocolate. Chai hot chocolate. Pumpkin Spice Hot Chocolate. Good ol’ fashion hot chocolate. One right after the other they’re all amazing.

Then there are all the recipes I’ve tried that you haven’t seen on the blog like dark, salted caramel, peppermint, nutella, and peanut butter. <— that one was the bomb dot com!

Eventually I’ll get around to sharing those delicious variations, too. But I figured it was about time to share the one I make the most often with you. This single serve microwave hot chocolate completely from scratch. No powders, not even cocoa powder, in this baby. Just good whole milk, chocolate chips, and a little bit of sugar.

Combine these things and what’ve you got? The most amazing single serve hot chocolate. It doesn’t require a powder that never dissolves or a boiling a whole kettle of water. You’re welcome.

As such this is one of my favorite things to whip up when I’m tucked under a blanket on a snowy day, working on this very blog. It’s ready in under 5 minutes and is perfect topped with mini marshmallows or whipped cream or easy homemade marshmallows {which I guess you could make mini, too}! Or if you want to get really fancy try these caramel latte marshmallows for a chocolate-y caramel-y latte drink to pick up your afternoon!

I like to garnish it with a candy cane since I always have a ton leftover after Christmas. But you can also add some homemade chocolate syrup or salted caramel sauce if you’re feeling adventurous.

You can make a big batch of this recipe over the stove if you want but if you’re sneaking a mug of hot chocolate while the kids are sleeping then definitely go for this quick and delicious microwave version. It’s so rich and easy you won’t want to share, anyway!

Microwave Hot Chocolate from Scratch

Yield: 1 person
Prep Time: 5 minutes
Total Time: 5 minutes

Ingredients

  • 1 1/2 cups whole milk
  • 3 Tbs chocolate chips
  • 2 Tbs brown sugar

Instructions

  1. In a 14oz mug microwave milk for 1 1/2 to 2 minutes or until hot but not boiling.
  2. Add chocolate chips and brown sugar and stir until completely combined and chocolate is melted.
